To the Cod:

  • 2 tbsp Olive Oil
  • 1/2 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups breadcrumbs
  • 1/2 cup chopped fresh parsley
  • 3 tablespoons salted butter, melted
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 2 lb Cod or Haddock fillets

To get the carrots,

  • 1 1/2 lb carrots cut crosswise
  • 2 tbsp salted Butter
  • 2 tbsp light brown sugar
  • 1/2 teaspoon kosher salt
  • 1 tbsp apple cider vinegar
  • 2 tablespoons fresh dill, chopped finely

To the Cod:

  1. Preheat the oven to 400°F
  2. Olive oil can be used to brush the rims of large baking sheets.
